A deilghtful cold salad for lunch or a light dinner. Finely chop the ingredients for a sandwich-style salad, or use larger chuncks as a topping to a bed of salad greens.

Ingredients
  • 3 cups cooked chicken, cut into 1/4 inch cubes
  • 1 cup mayonnaise (I prefer Spin Blend, but it is up to your tastes)
  • 1 cup diced celery
  • 1 cup diced red pepper
  • 1 cup shredded carrots
  • 1 cup dried cranberries
  • 1/2 cup chopped onions (use your favorite; yellow, sweet, purple, scallions, ramps, leeks, or bear's garlic)
  • 2 Tablespoons of Fantastic Foragers Sweet & Savary Tarragon
  • 1 teaspoon of Fantastic Foragers Vitamin C powder
Process
  • Prepare all the ingredients and add them to a large mixing bowl.  The order is not critical, and it all gets mixed together anyway.
  • Mix to combine everything together. Taste it!
  • If it needs "something", think about the taste profile, and then add things a little bit at a time to get the taste youi want.
  • For sweeter taste, add some sugar.
  • For more zest, add more Fantastic Foragers Vitamin C powder.
  • Refrigerate and enjoy !
Notes
  • This makes a pretty good-sized batch.  If you like it, it will disappear quickly.  If it is not to your liking, or if you don't eat that much, cut the recipe in half for the first time you make it.
